It’s the most wonderful time of the year – kale season! This dish has become a favorite of the husband and mine, adapted from a few different basic kale bakes we’ve tried over time. This one is simple and comforting. It can be mixed up a bit; sometimes we throw in a little lemon, some other greens, or double the cheese when we’re feeling like it, but we always come back to this simple beginning. Just greens, cheese and a little garlic. Might just be the perfect side.
Kale Pesto Bake
1 bunch of kale, removed from the ribs and chopped
1/4 cup olive oil
4 cloves of garlic, minced
1 tsp sea or kosher salt
1/2-1 cup Parmesan cheese, freshly grated or shredded
Preheat the oven to 350. Mix the kale, garlic, olive oil, and the salt in a large bowl.
Oil a baking dish and top with a layer of kale and sprinkle some of the shredded Parmesan on top.
Add another layer of kale and more Parmesan. Bake for 20 minutes or until the Parmesan has started to turn golden brown. Serve warm.
