Sweet Hubby

The lovely group my husband works with has this fantastic idea: instead of throwing a little get together for each person’s birthday, they have a big social once a month and celebrate all the birthdays that month. They take turns bringing something, and this month my love made one of hottest deserts going around Pinterest right now: cheesecake stuffed strawberries. Yum!

Cheesecake Stuffed Strawberries

1 pound large strawberries
8oz. block cream cheese – softened
4 tablespoons powdered sugar
1 teaspoon vanilla extract
4-6 Graham crackers


Rinse the strawberries and cut off the very top.
Hollow out a bit with the knife (some may already be hollow enough).


Combine cream cheese, powdered sugar and vanilla with a mixer or by hand.


Cut a small corner off of a plastic bag and fill with the cream cheese mix
(I recommend a larger gallon size bag, so it doesn’t squish out the back!).
Pipe the filling into the strawberries.


Crush the graham crackers into a small bowl.
Dip the top of the strawberries into the crumbs.


Enjoy! (But try not to eat them all right away. I think I had polished off around
three before he was able to pack the remainder up for his coworkers!)
